| | The facts of nutrition are changing: half of customers call healthy eating a top priority, and a third say sustainable eating is too. Research on the dining and shopping habits of 8,000+ consumers in the United States, the United Kingdom, France, and Germany found that a growing population is interested in conscious eating but frustrated at the limited menu when they search the shelves. Buyers are more likely to shop sustainably if it's easy and requires little change to their routine, and increased prevalence of food intolerances—and alternative dining styles, like "flexitarianism"—mean that more people are looking for more options.
